Pretty much what the title says.
I'm new to the server and looking to make a gun wielding character so I would appreciate any tips advice or anything else someone might like to offer to help me get started.
Also if someone has a place that my potential character could fit in I'm willing to entertain that too.

I'll apologize in advance for what'll be a bit of a long post, but this has all the information that I think is useful in answering this question.
A few things I can say that should help are armour selection, weapon of choice, where you plan to be in a fight, and most importantly, what your vision is for your character.
Guns- There are a few different types of gun, any of which can have modification added to work with almost any play style, though some guns fit some roles better. Wanna be a sniper? A hunting rifle with a compensator and sniper scope or magnification scope works great for a sniper rifle. Wanna be a gunslinger with a trusty revolver, running and gunning through the fight? Get an extended barrel and maybe a reflex sight on that ol' six shooter, should help you plenty with moving and shooting. Maybe want something that'll both shoot and can be used to smack a jerk getting in your face? A gunblade or one of the varieties of shotgun might be more your speed.
Armour- Light or Medium armour tend to be a gunslinger's choice when it comes to armour, depending on how close to melee you get and what your stamina requirements during combat are. Personally, on my primary character, a gunslinger, I use light armour, though that's specifically to get the various movement rate increases the armour skill offers, and the low stamina requirements, leaving me with plenty to do other things with, like toss grenades, and use marksmanship activated abilities. I know some gunslingers tend towards medium since it greatly raises your survivability in melee, which is great if you're leveling first aid, or anything else that requires you to get in the thick of it. Heavy armour could be good if you plan on tanking hits while shooting, though you'd have a considerable penalty to ranged attacks in it, so modifications to help deal with that would pretty much be a must.
With both of those in mind, the question is what sort of character do you have in mind. You can certainly find an armour and gun to fit what you have in mind, though be mindful that if you're gonna go for a light armour character, it always helps to have someone with you to take the big hits, whether that someone's an npc or a pc buddy.
As for a place for your potential character, there are a few factions around the city for people to join, and I'd advise looking into them, see what you think would best fit your character. You can join two of them, in combinations of Power/Religion, Religion/University, and University/Power.
Other than that, if you have any specific questions, don't be afraid to ask questions, or to poke one of us in game. Most of us don't bite, and those that do have been thoroughly smacked with newspapers.

I found using medium armor with a machine gun, then shield and shot-gun to be very reliable to versatile.

Bring a hireling, or get a pet, if you cannot locate a fellow PC to run melee. Anything, really, to keep opponents away from you while making those ranged attacks. Unless you have an Iron-Sight, you will take a -4 attack penalty in melee combat with any ranged weapon. Shotguns are basically the exception because, well, it's a shotgun at point blank range. Hirelings can be located in a few places like the inn, and pets (starter being a Shepard dog) can be got at the kennels outside the Eastgate. Training animal handling can improve your dog, or transition to other hardier and more exotic creatures. Most questions we will happily discuss on the Discord channel.

So question... and I have my own reasons for asking this. Is it possible with extra work(Leveling, animal handling feats, etc) and what not to keep the starter pet viable throughout the game or will there reach a point where the Shepard just can't handle?

The intention is generally that you'll get better pets once your AT gets better. Heavy investment in the Animal Training skills can help your starting pet for a while longer, but content scales quickly enough that you may find the starting dog to start lagging behind before the halfway point.

The intention is generally that you'll get better pets once your AT gets better. Heavy investment in the Animal Training skills can help your starting pet for a while longer, but content scales quickly enough that you may find the starting dog to start lagging behind before the halfway point. Ah I was going to make the pet as part of my character in a manner of speaking which doesn't work as cleanly if I'm constantly switching the pets.
