Title. Dealing Wounding damage does not appear to progress bestiary entries. I killed a Manticore in the labyrinth using almost only wounding damage (from Sneak Attack) and got 0% progression from it.

Seems like it's set up properly. What are your current progression %, hunting skill level, and hunting abilities?

My Hunting is 44 (no feats), and my progression went from 71% to 72% for killing one Manticore in the Labyrinth using almost only Sneak Attack. Meanwhile, I usually progress around 5% per manticore when I kill them normally in the desert.

I don't think it's sneak attack related, there's a soft cap system for bestiary percent progression beyond your skill level.
I think you actually end up a bit better off this way because the SXP reward for percent completion is fixed and probably more useful when your hunting level is 70.
Anything listed as being weak vs. wounding for you to kill? If there's a gap in your level range I can add something.

There's actually nothing at all in my bestiary that is listed as being weak to bleed damage. And only one creature (Skeleton) listed as being resistant to it.

I don't think there is a mob with bestiary weakness to "bleed".
However, it's almost sure to be the soft cap mentioned above. I don't have the definitive numbers but it was clear in the progress numbers that there is a retricted number of normal 100% completions, increasing with the skill tier of Hunting.
So to get back to the normal 5% completion you have seen, you'll need to increase your hunting tier. Otherwise you'll eventually see 1 or 0 % change in the bestiary%.
Once you get to the point where you are seeing 1% etc, you might as well work on the hunting skill or take the hunting feat that I think is specifically for that (I forget the name). Effectively this means going to an area where the skill gets decent xp; I'm guessing Sedis is not giving your hunting much xp with the difference in levels.
Edit: however, if the desert manticores are still giving you 5% currently, then...the soft cap can't be the issue. Have you checked the desert ones since the %decrease?
