I haven't tested it completely yet.... but you can click on the tailoring mirrors while someone else is using them and I bet you can prolly start clicking on stuff and messing with their outfit and basically troll them until they realize you are being a dick.

These conversations are supposed to be instanced, so if they're working properly you can just edit your own appearance.

Nope when you click on the mirror it brings you into whatever part they are working on. I didn't click on anything because I didn't want to mess them up. But as they hit buttons it changed from screen to screen so you definitely wouldn't be able to change your own stuff

As a somewhat similar concern, when using the mirrors every single selection is broadcast as a 'say' message to everyone in the room, which quickly bogs down everyone's chat-logs and can make any sort of conversation difficult to follow.
With someone else using one of the mirrors and using my own, it quickly meant I had to give-up trying to follow PM discussions while changing my outfit appearance.

You can move NPC dialog out of your chat window and put it in the combat log out just nowhere. Right click the windows to do this.

^ This is true, but I thought there was also a way to make all conversations between an NPC and a player private, so it wouldn't announce to everyone around what you're saying to an NPC. I know it's like this on a few servers, but it's not really all that bad if you turn off dialogue like PE said
