Alrighty - just got here and got 3 ideas that *may* be possible.
Off-handed ranged weapons - be able to use a weapon in the main hand, and a ranged weapon in the off hand. I say ranged because right now you CAN do a shotgun and sword, but the shotgun is in your main hand. If there is a way to be able to do both (maybe need to make all weapons use their bullets as abilities so they can be "melee" weapons). This would facilitate the idea o a rapier in the main hand, and a pistol in the off-hand.
One-Handed weapon Only style - so this is more about the skills associated with weapon choice. Right now one-handed really means sword-and-board. Could there be an added line of abilities in there that are instead more for a fencer? i.e a weapon in the main hand and nothing (or a non-damaging item like a torch or lantern) in the off-hand.

So, regarding your second two suggestions, I'll offer my insight and PE or whoever can pop in and condemn or support my misconceptions later.
Regarding off-hand ranged weapons, guns and fire-arms are currently based off the NWN2 ranged weapon system. While one-handed ranged weapons like slings could be used with a shield, most were two-hand and none could be pared with a melee weapon. Unfortunately, we have a similar limitation here, due to using the same engine. PE might figure a means to magic that limitation away, but as it stands the classic "pistol and cutlass" is not supported by any current NWN2 stuff that I know of. Off-hand activateable abilities could probably be managed though; after all, you probably want to shoot a different target than the one you are poking with a sword.
Regarding one-handed-weapon style: I would like to apologize for the brief summary I gave you the other day in-game, as it was too brief and I had forgotten to include some data. The size of a weapon determines what skill it trains when used without an offhand weapon or shield. Medium weapons, such as war-hammers, long-swords, and maces, will train Two-Handed skill when wielded alone or with a torch or lantern, presuming that wielding them two-handed would be possible following standard D&D convention. Light weapons, such as daggers and hatchets, will always train one-handed-and-shield when wielded singly, since they cannot be used two-handed at all. As a result, if you plan to use a single medium -sized-or-bigger weapon, two-handed skills will be your friend, providing generally offence-related weapon-abilities.
Switching to a shield in combat might thereby decrease your damage by using a lower rank in One-hand than Two-hand skill, but will probably give better durability due to the increased armor and block chances.
